A fast, fresh, and flavorful salad featuring chickpeas, cucumbers, tomatoes, olives, and feta, dressed in a tangy mixture.
Ingredients

- 2 (15-ounce) cans of chickpeas – drained and rinsed
- 3/4 cup chopped cucumber
- 2/3 cup sliced cherry tomatoes
- 1/2 cup chopped red bell pepper
- 1/3 cup sliced kalamata olives
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Drain and rinse the chickpeas well.
- Chop the cucumber, red bell pepper, and red onion. Slice the cherry tomatoes and olives.
- Put all salad ingredients in a large bowl.
- Put the dressing ingredients in a jar with a lid. Shake the jar hard until the dressing blends.
- Pour the dressing over the salad and toss to coat.
- Serve cold or at room temperature.
Notes
Rinse chickpeas well to remove canning liquid. Cut vegetables into similar sizes for balanced flavor. Let sit for 10–15 minutes to blend flavors.
