Description

Ingredients

  • 2 (15-ounce) cans of chickpeas – drained and rinsed
  • 3/4 cup chopped cucumber
  • 2/3 cup sliced cherry tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Drain and rinse the chickpeas well.
  2. Chop the cucumber, red bell pepper, and red onion. Slice the cherry tomatoes and olives.
  3. Put all salad ingredients in a large bowl.
  4. Put the dressing ingredients in a jar with a lid. Shake the jar hard until the dressing blends.
  5. Pour the dressing over the salad and toss to coat.
  6. Serve cold or at room temperature.

Notes

Rinse chickpeas well to remove canning liquid. Cut vegetables into similar sizes for balanced flavor. Let sit for 10–15 minutes to blend flavors.
