- Bell peppers, onions
- Chili powder, cumin, paprika
- Bread crumbs, Parmesan cheese, egg
- Marinara sauce, mozzarella
- Mixed vegetables (fresh or frozen)
- Soy sauce, sesame oil, honey, ginger
- Chicken broth
- Carrots, celery, onion
- 1 ripe mango
- Red onion, jalapeño, cilantro, lime
- Salt and pepper to taste
Instructions
- Classic Chicken Salad: Mix shredded chicken, mayo, yogurt, celery, and red onion. Season with salt and pepper. Serve on bread or lettuce.
- Zesty Lemon Herb Chicken: Marinate chicken in lemon juice, olive oil, garlic, thyme, rosemary. Bake at 400°F for 25–30 minutes.
- Chicken Fajitas: Cook chicken strips with olive oil. Add sliced peppers and onions, season with spices, and serve with tortillas.
- Baked Chicken Parmesan: Coat chicken with egg and breadcrumb mix. Bake at 450°F for 20 minutes, top with marinara and mozzarella, bake 10 more minutes.
- Chicken Stir-Fry: Stir-fry chicken, add vegetables. Pour sauce of soy, honey, garlic, and ginger. Cook till heated through. Serve over rice.
- Chicken & Vegetable Soup: Sauté onion, carrots, celery. Add chicken and broth, then frozen veggies. Simmer for 20 minutes.
- Grilled Chicken with Mango Salsa: Grill seasoned chicken. Mix mango, onion, jalapeño, cilantro, lime juice for salsa. Spoon over grilled chicken.
Notes
