Description

These addictively crispy garlic herb roasted potato skins are a perfect snack or appetizer, crunchy and flavorful, made from leftover potatoes.


Ingredients

Scale
  • 4 large potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them several times with a fork.
  3. Bake the potatoes for about 45-60 minutes, or until tender.
  4. Once the potatoes are cool enough to handle, cut them in half and scoop out some of the flesh, leaving a thin layer inside the skin.
  5. Brush the potato skins with olive oil and sprinkle garlic powder, dried herbs, salt, and pepper.
  6. Place the skins on a baking sheet and bake for an additional 15-20 minutes, or until crispy.
  7. If desired, sprinkle with grated Parmesan cheese and return to the oven for another 5 minutes.
  8. Garnish with fresh parsley before serving. Enjoy!

Notes

For extra flavor, add smoked paprika or red pepper flakes for a spicy kick. You can also use melted butter instead of olive oil for a richer taste.
