Description
These addictively crispy garlic herb roasted potato skins are a perfect snack or appetizer, crunchy and flavorful, made from leftover potatoes.
Ingredients

- 4 large potatoes
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried herbs (such as thyme or rosemary)
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them several times with a fork.
- Bake the potatoes for about 45-60 minutes, or until tender.
- Once the potatoes are cool enough to handle, cut them in half and scoop out some of the flesh, leaving a thin layer inside the skin.
- Brush the potato skins with olive oil and sprinkle garlic powder, dried herbs, salt, and pepper.
- Place the skins on a baking sheet and bake for an additional 15-20 minutes, or until crispy.
- If desired, sprinkle with grated Parmesan cheese and return to the oven for another 5 minutes.
- Garnish with fresh parsley before serving. Enjoy!
Notes
For extra flavor, add smoked paprika or red pepper flakes for a spicy kick. You can also use melted butter instead of olive oil for a richer taste.
