Description

A quick and healthy air fryer recipe with moist salmon and roasted vegetables, perfect for weeknight meals or small gatherings.


Ingredients

  • 2 salmon fillets (cut into 4 pieces)
  • 1 bunch asparagus (ends cut off)
  • 3 cups broccoli florets
  • 3 cups sliced mushrooms
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Instructions

  1. Wash the salmon and pat it dry with paper towels.
  2. In a bowl, add the olive oil, Dijon mustard, lemon juice, salt, black pepper, paprika, and garlic powder. Whisk to make the sauce.
  3. Brush the salmon fillets generously with about three-fourth of the sauce.
  4. Toss the vegetables with the remaining sauce.
  5. Spread the vegetables in the air fryer basket and arrange the salmon fillets over them.
  6. Air fry for 8-10 minutes at 390°F.
  7. Once done, transfer the vegetables and salmon to a platter and serve warm with a lemon wedge.

Notes

Pat salmon dry for better sauce adherence. Cut vegetables evenly. Avoid overcrowding the air fryer basket.
