A quick and healthy air fryer recipe with moist salmon and roasted vegetables, perfect for weeknight meals or small gatherings.
Ingredients

- 2 salmon fillets (cut into 4 pieces)
- 1 bunch asparagus (ends cut off)
- 3 cups broccoli florets
- 3 cups sliced mushrooms
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1/2 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
Instructions
- Wash the salmon and pat it dry with paper towels.
- In a bowl, add the olive oil, Dijon mustard, lemon juice, salt, black pepper, paprika, and garlic powder. Whisk to make the sauce.
- Brush the salmon fillets generously with about three-fourth of the sauce.
- Toss the vegetables with the remaining sauce.
- Spread the vegetables in the air fryer basket and arrange the salmon fillets over them.
- Air fry for 8-10 minutes at 390°F.
- Once done, transfer the vegetables and salmon to a platter and serve warm with a lemon wedge.
Notes
Pat salmon dry for better sauce adherence. Cut vegetables evenly. Avoid overcrowding the air fryer basket.
