Air Fryer Salmon and Vegetables

A quick and healthy meal featuring salmon and vegetables roasted to perfection in the air fryer.

Ingredients

  • 2 salmon fillets (cut into 4 pieces)
  • 1 bunch asparagus (ends cut off)
  • 3 cups broccoli (florets)
  • 3 cups mushrooms (sliced)
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper (freshly cracked)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Instructions

  1. Wash the salmon and pat it dry with paper towels.
  2. In a bowl, add olive oil, Dijon mustard, lemon juice, salt, black pepper, paprika, and garlic powder. Whisk to make the sauce.
  3. Brush the salmon fillets generously with about three-fourths of the sauce.
  4. Toss the vegetables with the remaining sauce.
  5. Spread the vegetables in the basket of the air fryer and arrange the salmon fillets over them.
  6. Air fry for 8-10 minutes at 390°F.
  7. Once done, take out the vegetables and fish and serve warm.

Notes

For extra flavor, consider adding a sprinkle of Parmesan after cooking. Store leftovers in an airtight container and reheat in the air fryer to maintain crispness.
