Ingredients

- 1 lb chicken breasts, diced
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 2 tablespoons honey or a low-carb sweetener
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add diced chicken and season with salt and pepper. Cook until browned and cooked through.
- Add garlic and ginger, and sauté for about 1 minute until fragrant.
- Add mushrooms and soy sauce; cook until mushrooms are tender.
- Stir in honey or sweetener and cook for another 1-2 minutes, allowing sauce to thicken slightly.
- Garnish with green onions and serve.
Notes
Serve hot over steamed rice or noodles, and store in an airtight container in the fridge for up to 3 days.
