Ingredients

  • 1 lb chicken breasts, diced
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or a low-carb sweetener
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat sesame oil over medium heat.
  2. Add diced chicken and season with salt and pepper. Cook until browned and cooked through.
  3. Add garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Add mushrooms and soy sauce; cook until mushrooms are tender.
  5. Stir in honey or sweetener and cook for another 1-2 minutes, allowing sauce to thicken slightly.
  6. Garnish with green onions and serve.
