Baked Sweet Potatoes

A delicious and nutritious dish, baked sweet potatoes are easy to prepare and packed with vitamins. Enjoy them alone or with various toppings.

Ingredients

  • 4 medium sweet potatoes (about 2 lbs)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • Optional toppings: maple syrup, cinnamon, Greek yogurt, avocado

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly.
  3. Poke several holes in each potato with a fork to allow steam to escape.
  4. Drizzle olive oil over each potato and massage it in gently.
  5. Sprinkle salt and pepper evenly over the oiled potatoes.
  6. Place on a baking sheet and roast for 45-60 minutes until tender when pierced with a fork.
  7. Let cool slightly before serving. Slice open and add desired toppings.

Notes

For extra crispy skin, place the sweet potatoes directly on the oven rack instead of a baking sheet. Adjust cooking time based on the size of your sweet potatoes.
