A light and fresh salad made with vegetables and feta cheese, perfect for quick side dishes.

Ingredients

  • 1 cup cherry tomatoes, chopped
  • 1 cucumber, chopped
  • 1/2 red onion, chopped
  • 1 bell pepper, chopped
  • 1/2 cup olives, chopped
  • 1 cup feta cheese, crumbled

  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Chop the cherry tomatoes, cucumber, red onion, bell peppers, and olives into bite-sized pieces.
  2. In a large bowl, combine the chopped vegetables and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Serve chilled or at room temperature as a side dish.
