Ingredients

- 1 cup cream cheese
- 1/2 cup powdered erythritol (or your preferred sweetener)
- 1 cup blueberries (fresh or frozen)
- 1 teaspoon vanilla extract
- 4 low-carb tortillas or wraps
- 1 tablespoon lemon juice
- Cooking spray or butter (for greasing)
Instructions
- In a mixing bowl, combine the cream cheese, powdered erythritol, vanilla extract, and lemon juice until smooth.
- Gently fold in the blueberries.
- Lay a low-carb tortilla flat and spread a layer of the cream cheese mixture over it.
- Roll the tortilla up tightly and place it seam-side down.
- Repeat with remaining tortillas.
- Preheat a skillet over medium heat and add a little cooking spray or butter.
- Place the roll-ups in the skillet and cook until golden brown on all sides, about 2-3 minutes per side.
- Remove from the skillet, slice, and serve warm. Enjoy!
