Ingredients

  • 1/2 cup powdered erythritol (or your preferred sweetener)
  • 1 cup blueberries (fresh or frozen)
  • 1 teaspoon vanilla extract
  • 4 low-carb tortillas or wraps
  • 1 tablespoon lemon juice
  • Cooking spray or butter (for greasing)

Instructions

  1. In a mixing bowl, combine the cream cheese, powdered erythritol, vanilla extract, and lemon juice until smooth.
  2. Gently fold in the blueberries.
  3. Lay a low-carb tortilla flat and spread a layer of the cream cheese mixture over it.
  4. Roll the tortilla up tightly and place it seam-side down.
  5. Repeat with remaining tortillas.
  6. Preheat a skillet over medium heat and add a little cooking spray or butter.
  7. Place the roll-ups in the skillet and cook until golden brown on all sides, about 2-3 minutes per side.
