Boston Cream Pie Cookies

A fun twist on the classic dessert, these Boston Cream Pie Cookies combine delicious flavors of chocolate and vanilla in a soft cookie texture, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup vanilla pudding (prepared)
  • 1/2 cup chocolate ganache (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the softened butter, then add the egg and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet mixture until combined.
  5. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  6. Bake for 10-12 minutes until the edges are firm.
  7. Let them cool, then fill each cookie with vanilla pudding.
  8. Top with chocolate ganache.
  9. Allow to set before serving.

Notes

Make sure the butter is softened for easier mixing. Use a cookie scoop for equally sized cookies. Allow the cookies to cool completely before filling them to prevent the pudding from melting.
