Description

Delicious bite-sized cookies filled with creamy vanilla pudding and topped with rich chocolate ganache.


Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1/2 cup vanilla pudding (prepared)
  • 1/2 cup chocolate ganache (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the softened butter. Add the egg and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet mixture until combined.
  5. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  6. Bake for 10-12 minutes until the edges are firm.
  7. Let them cool, then fill each cookie with vanilla pudding.
  8. Top with chocolate ganache. Allow to set before serving.

Notes

Ensure butter is softened for easier mixing. Use a cookie scoop for even-sized cookies.
