Butter Bean Soup

A healthy and hearty Butter Bean Soup that warms you from the inside out.

Ingredients

  • 2 cans butter beans (lima beans), drained and rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery; sauté until softened.
  2. Stir in the garlic and cook for an additional minute.
  3. Add the butter beans, vegetable broth, diced tomatoes, thyme, and basil. Bring to a boil, then reduce to a simmer.
  4. Cook for about 20-30 minutes, allowing the flavors to meld.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley.

Notes

Use fresh vegetables for better taste and adjust seasonings according to preference. Blend a portion for a creamier texture.
