Description

A simple and flavorful low carb casserole featuring ground beef, cabbage, and cheese that cooks in one pan.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large sweet onion
  • 1 medium orange bell pepper
  • 3 cloves garlic, minced
  • 1 can fire roasted diced tomatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • garlic powder, to taste
  • onion powder, to taste
  • salt, to taste
  • pepper, to taste
  • 4 cups chopped green cabbage
  • 12 cups shredded cheddar or jack cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  3. Add 1 pound ground beef. Cook until no longer pink, breaking it up with a spoon. Season with salt and pepper.
  4. Add the chopped onion and diced orange bell pepper. Cook until soft, about 5 minutes.
  5. Stir in 3 cloves minced garlic. Cook 30 seconds until you smell the garlic.
  6. Add the can of fire roasted diced tomatoes. Stir in 1 teaspoon smoked paprika, 1 teaspoon dried oregano, a pinch of garlic powder and onion powder. Taste and adjust salt and pepper.
  7. Add the 4 cups chopped green cabbage. Stir to combine. Cook until the cabbage wilts, about 5–7 minutes.
  8. Transfer the mixture to a medium baking dish. Spread evenly.
  9. Sprinkle 1–2 cups shredded cheddar or jack cheese over the top.
  10. Bake in the preheated oven for 15–20 minutes, until cheese melts and the edges bubble.
  11. Let rest for 5 minutes before serving.

Notes

Cool the casserole to room temp before storing. This dish can be made ahead and reheated later.
