Ingredients

- 1 medium head of cabbage, chopped
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- Salt to taste
- 1 tablespoon fresh parsley, chopped (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5 minutes until soft.
- Stir in the minced garlic and cook for another minute.
- Add the chopped cabbage, diced tomatoes, vegetable broth, turmeric, cumin, black pepper, paprika, and salt. Mix well.
- Bring to a boil, then reduce the heat and simmer for 30-40 minutes until the cabbage is tender.
- Before serving, stir in the lemon juice and adjust seasonings if needed.
- Garnish with fresh parsley if desired.
Notes
Let the soup cool to room temperature before storing in an airtight container in the fridge for up to 4 days. The soup freezes well for up to 3 months.
