Description

A quick and easy one-pan meal featuring spicy Cajun flavors, tender chicken, and smoky sausage with bright vegetables.


Ingredients

  • 2 chicken breasts, sliced
  • 1 pound sausage, sliced
  • 2 cups bell peppers, sliced
  • 1 cup zucchini, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced chicken and sausage and cook until browned.
  3. Add the bell peppers and zucchini to the skillet.
  4. Sprinkle Cajun seasoning over the mixture and stir well.
  5. Cook until the vegetables are tender but still have a bit of snap.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve hot.

Notes

Serve with rice, pasta, or a side salad. Can easily adjust spice level by changing Cajun seasoning amount.
