Description

A simple and fresh dish featuring juicy chicken breasts topped with mozzarella, tomatoes, and basil.


Ingredients

  • 4 chicken breasts
  • 8 oz fresh mozzarella cheese
  • 2 tomatoes
  • 1/4 cup fresh basil
  • 2 tbsp olive oil
  • 2 tbsp sugar-free balsamic glaze
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat and sear the chicken for 4-5 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish.
  5. Layer slices of fresh mozzarella and tomatoes on top of the chicken.
  6. Bake in the oven for 20-25 minutes until the chicken is cooked through.
  7. Remove from the oven and garnish with fresh basil and drizzle with sugar-free balsamic glaze.
  8. Serve with a salad or veggies.

Notes

Use thin or pounded chicken breasts for even cooking. Add the basil right before serving.
