A simple and fresh dish featuring juicy chicken breasts topped with mozzarella, tomatoes, and basil.

- 4 chicken breasts
- 8 oz fresh mozzarella cheese
- 2 tomatoes
- 1/4 cup fresh basil
- 2 tbsp olive oil
- 2 tbsp sugar-free balsamic glaze
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish.
- Layer slices of fresh mozzarella and tomatoes on top of the chicken.
- Bake in the oven for 20-25 minutes until the chicken is cooked through.
- Remove from the oven and garnish with fresh basil and drizzle with sugar-free balsamic glaze.
- Serve with a salad or veggies.
Notes
Use thin or pounded chicken breasts for even cooking. Add the basil right before serving.
