Description

A warm, creamy dip with sweet caramelized onions, perfect for sharing at parties.


Ingredients

  • 3 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh thyme or chopped parsley for garnish (optional)

Instructions

  1. Heat butter and olive oil in a skillet over medium-low. Add sliced onions, salt, and pepper. Cook 30-40 minutes, stirring occasionally, until golden brown. Stir in sugar halfway if using.
  2. In a bowl, combine mayonnaise, sour cream, garlic powder, half the Gruyère, and all the Parmesan. Stir in cooled caramelized onions.
  3. Preheat oven to 375°F (190°C). Transfer mixture to a baking dish, sprinkle with remaining Gruyère, and bake for 20-25 minutes until bubbly and golden.
  4. Remove from oven, cool for 5 minutes, garnish with fresh herbs, and serve warm with crostini, crackers, or sliced baguette.

Notes

Let the dip rest for 5 minutes after baking for easier scooping. You can store leftovers in the fridge for up to 3 days.
