A warm, creamy dip with sweet caramelized onions, perfect for sharing at parties.

- 3 medium yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon sugar (optional)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1 1/2 cups shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- Fresh thyme or chopped parsley for garnish (optional)
Instructions
- Heat butter and olive oil in a skillet over medium-low. Add sliced onions, salt, and pepper. Cook 30-40 minutes, stirring occasionally, until golden brown. Stir in sugar halfway if using.
- In a bowl, combine mayonnaise, sour cream, garlic powder, half the Gruyère, and all the Parmesan. Stir in cooled caramelized onions.
- Preheat oven to 375°F (190°C). Transfer mixture to a baking dish, sprinkle with remaining Gruyère, and bake for 20-25 minutes until bubbly and golden.
- Remove from oven, cool for 5 minutes, garnish with fresh herbs, and serve warm with crostini, crackers, or sliced baguette.
Notes
Let the dip rest for 5 minutes after baking for easier scooping. You can store leftovers in the fridge for up to 3 days.
