Carrot and Walnut Layer Cake

A delightful dessert combining sweet carrots and rich walnuts with a creamy cream cheese frosting.

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated fresh carrots
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • Cream cheese frosting for layering
  • Walnut halves for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs and whisk in the vegetable oil and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the grated carrots and chopped walnuts.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Once cooled, spread a layer of cream cheese frosting between the layers and on top of the cake.
  10. Decorate with walnut halves and serve.

Notes

Use fresh carrots for the best flavor. Toasting walnuts can enhance their flavor. Adjust spices to your preference.
