Carrot Cake Energy Bites with Peanut Butter

  • 1 cup shredded carrots (about 2 medium carrots)
  • 1 cup pitted dates (soft)
  • 1/2 cup natural peanut butter
  • 1 tsp ground cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Gather all ingredients on a clean surface.
  2. In a food processor, blend rolled oats, shredded carrots, pitted dates, peanut butter, and cinnamon until well combined but still chunky.
  3. If the mixture is too dry, add more peanut butter or water; if too wet, add more oats to reach a dough-like consistency.
  4. Scoop small portions (about 1 inch) and roll them into balls.
  5. Place on a lined baking sheet and chill in the fridge for at least 30 minutes to firm up.
  6. Enjoy immediately or store in an airtight container.
