Description

A quick, creamy, and fresh salad that tastes like cheesecake but is light and perfect for hot days. It’s made with real fruit and can be prepared in minutes.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar (or sugar substitute for low carb)
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1 cup strawberries, sliced
  • Optional: crushed graham crackers for topping

Instructions

  1. In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth.
  2. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until combined.
  4. Add the blueberries and sliced strawberries, gently folding to incorporate.
  5. Serve immediately or refrigerate until ready to serve, optionally sprinkling crushed graham crackers on top before serving.

Notes

Use room temperature cream cheese for smooth blending. Chill the heavy cream before whipping for best results. Fold gently to keep the mixture light and airy. Stir gently before serving if the fruit releases juice.
