Description

A creamy and warm bake of chicken, ham, and Swiss cheese nestled in tortillas, perfect for families and easy to make.


Ingredients

  • 2 cups cooked shredded chicken
  • 6 tortillas
  • 1 cup Swiss cheese, shredded
  • 1/2 cup ham, diced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. In a bowl, mix the shredded chicken, diced ham, and half of the Swiss cheese.
  3. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  4. In a separate bowl, combine the heavy cream, chicken broth, Dijon mustard, salt, and pepper. Pour the mixture over the enchiladas.
  5. Top with the remaining Swiss cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Serve hot.

Notes

Use rotisserie chicken to cut prep time. Warm tortillas before filling for easier rolling.
