Instructions
- Combine the crispy rice, cooked chicken, and mixed vegetables in a large bowl.
- Whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, and water in a separate bowl until smooth.
- Pour the peanut dressing over the salad ingredients and toss to coat evenly.
- Season with salt and pepper to taste.
- Garnish with chopped peanuts and fresh cilantro if desired.
- Serve immediately or store in the fridge for meal prep.
