A warm and flavorful one-skillet meal featuring brown chicken thighs, tomatoes, capers, and herbs.
Ingredients

- 4 chicken thighs
- 2 cups diced tomatoes
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/4 cup capers
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken thighs with salt and pepper and add them to the skillet.
- Brown the chicken thighs on both sides for about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add diced onions and garlic, and sauté until the onions are translucent.
- Add diced tomatoes, capers, oregano, and basil. Bring the mixture to a simmer.
- Return the chicken to the skillet, cover, and cook for an additional 20-25 minutes, or until the chicken is cooked through.
- Serve hot, garnished with additional herbs if desired.
Notes
Brown the chicken well for extra flavor and use canned tomatoes if fresh ones are unavailable.
