Description

A warm and flavorful one-skillet meal featuring brown chicken thighs, tomatoes, capers, and herbs.


Ingredients

  • 4 chicken thighs
  • 2 cups diced tomatoes
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup capers
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and add them to the skillet.
  3. Brown the chicken thighs on both sides for about 5-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add diced onions and garlic, and sauté until the onions are translucent.
  6. Add diced tomatoes, capers, oregano, and basil. Bring the mixture to a simmer.
  7. Return the chicken to the skillet, cover, and cook for an additional 20-25 minutes, or until the chicken is cooked through.
  8. Serve hot, garnished with additional herbs if desired.

Notes

Brown the chicken well for extra flavor and use canned tomatoes if fresh ones are unavailable.
