Tender chicken meatballs tossed in a creamy Cajun alfredo sauce, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp Cajun seasoning
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well and form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20-25 minutes or until cooked through.
  4. In a skillet, melt butter over medium heat.
  5. Stir in heavy cream and Cajun seasoning, and bring to a simmer.
  6. Stir in Parmesan cheese until melted and the sauce thickens.
  7. Toss the baked meatballs in the Cajun alfredo sauce. Serve immediately.

Notes

For a lighter option, use half-and-half instead of heavy cream. Serve over pasta, rice, or steamed vegetables, and garnish with extra Parmesan or chopped parsley.
