Ingredients

- 1 lb ground chicken
- 1 cup spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup heavy cream
- 1/2 cup cream cheese
- 1/2 cup grated Parmesan cheese (for sauce)
- 1 tsp garlic powder
- Cauliflower rice (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together ground chicken, chopped spinach, breadcrumbs, 1/4 cup Parmesan cheese, egg, minced garlic, salt, and pepper.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes or until cooked through.
- In a saucepan, combine heavy cream, cream cheese, remaining Parmesan cheese, garlic powder, and a little salt and pepper over medium heat until smooth and heated through.
- Serve meatballs over cauliflower rice and drizzle spinach Alfredo sauce on top.
Notes
This dish is low carb when served with cauliflower rice. For a different texture, you can use turkey or a mix of chicken and pork. Add red pepper flakes for heat or stir in cooked mushrooms for more flavor.
