Chicken Pot Pie Soup

A comforting chicken pot pie soup that combines the familiar flavors of chicken pot pie into a warm, hearty dish, perfect for chilly evenings.

  • 1 lb chicken breast, cubed
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons flour (optional for thickening)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add cubed chicken and cook until browned.
  2. Add onions, carrots, and celery. Cook until vegetables are tender.
  3. Stir in potatoes and thyme, then pour in chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  5. If using, stir in flour to thicken, followed by heavy cream.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

For extra flavor, use homemade chicken broth. Feel free to add other vegetables like peas or corn. If you want a creamier texture, blend a portion of the soup.
