- 2 boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (14 oz) chicken broth
- 1 can (4 oz) diced green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup corn (optional)
- Tortilla strips for garnish
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté the diced onion and minced garlic until translucent.
- Add the chicken breasts and cook until browned.
- Stir in the diced tomatoes, chicken broth, green chilies, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes, until chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- If desired, add corn and heat through.
- Serve hot, garnished with tortilla strips and chopped cilantro.
Notes
For a faster option, use cooked rotisserie chicken. Adjust seasoning to taste and consider adding black beans or extra corn for texture. Pairs well with a salad or sandwich.
