Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cold water until dough comes together.
  3. Roll out the dough and fit it into a 9-inch tart pan. Chill for 30 minutes.
  4. Bake the crust for 15 minutes until lightly golden.
  5. In a large bowl, whisk together sugar, corn syrup, cocoa powder, and melted butter. Add eggs, bourbon, and vanilla, mixing until smooth.
  6. Stir in chopped pecans and pour the filling into the prepared crust.
  7. Bake for 30-35 minutes until set.
  8. Allow to cool before slicing and serving.

Notes

Keep the butter cold for a flaky crust. Chill before baking. Use quality cocoa and bourbon.
