- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsalted butter, melted
- 3 large eggs
- 1/4 cup bourbon
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cold water until dough comes together.
- Roll out the dough and fit it into a 9-inch tart pan. Chill for 30 minutes.
- Bake the crust for 15 minutes until lightly golden.
- In a large bowl, whisk together sugar, corn syrup, cocoa powder, and melted butter. Add eggs, bourbon, and vanilla, mixing until smooth.
- Stir in chopped pecans and pour the filling into the prepared crust.
- Bake for 30-35 minutes until set.
- Allow to cool before slicing and serving.
Notes
Keep the butter cold for a flaky crust. Chill before baking. Use quality cocoa and bourbon.
