Chocolate Coffee Tiramisu Whoopie Pies

Delightful handheld treats combining rich chocolate and coffee flavors in a twist on the classic tiramisu.

  • 2 1/4 cups (270 g) all-purpose flour
  • 1/2 cup (40 g) unsweetened cocoa powder (preferably Dutch-processed), plus more for dusting
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 cup (215 g) packed light brown sugar
  • 1/4 cup vegetable oil
  • 4 Tbsp unsalted butter, softened
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 3/4 cup milk
  • 1/4 cup freshly brewed coffee, warm
  • 3/4 cup heavy cream
  • 1/2 cup (55 g) confectioners’ sugar
  • 1 Tbsp instant coffee
  • 6 oz mascarpone, cold

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and lightly grease them with cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, kosher salt, and baking soda.
  3. In a large bowl, beat the light brown sugar, vegetable oil, and softened butter until light and fluffy, about 2 to 3 minutes.
  4. Add the egg and vanilla extract, mixing until fully combined. Gradually mix in the dry ingredients until you have a thick batter with a few dry streaks remaining.
  5. Pour in the milk and warm coffee, then mix until just combined.
  6. Using a medium ice cream scoop, place rounded scoops of batter onto prepared baking sheets, spacing them about 3 inches apart.
  7. Bake for 12 to 14 minutes until the edges are firm and the centers remain slightly soft. Let them cool completely on the sheets.
  8. Whip the heavy cream, confectioners’ sugar, and instant coffee until soft peaks form. Gently mix in the mascarpone cheese until stiff peaks form.
  9. Flip half of the cooled cake discs over so the flat sides are facing up. Spoon a generous amount of mascarpone filling onto each flat disc and top with another disc, pressing gently to spread the filling to the edges.
  10. Dust the tops with additional cocoa powder for finishing.

Notes

Use high-quality cocoa powder and fresh coffee for optimal flavor. Store in an airtight container in the fridge for up to three days. Can be frozen for longer storage.
