Description
Delightful whoopie pies combining rich chocolate and coffee flavors with creamy mascarpone filling. Perfect for any occasion!
Ingredients
Scale
- Cooking spray
- 2 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder (preferably Dutch-processed), plus more for dusting
- 1 tsp baking powder
- 1 tsp kosher salt
- 1/2 tsp baking soda
- 1 cup packed light brown sugar
- 1/4 cup vegetable oil
- 4 Tbsp unsalted butter, softened
- 1 large egg
- 1 tsp pure vanilla extract
- 3/4 cup milk
- 1/4 cup freshly brewed coffee, warm
- 3/4 cup heavy cream
- 1/2 cup confectioners’ sugar
- 1 Tbsp instant coffee
- 6 oz mascarpone, cold
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and lightly grease them with cooking spray.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, kosher salt, and baking soda.
- In a large bowl, use a handheld mixer on medium-high speed to beat the light brown sugar, vegetable oil, and softened butter until light and fluffy, about 2 to 3 minutes.
- Add the egg and vanilla extract, beating until fully combined. Gradually mix in the dry ingredients until you have a thick batter.
- Pour in the milk and warm coffee, then mix until just combined.
- Using a medium ice cream scoop, place rounded scoops of batter onto the prepared baking sheets, spacing them about 3 inches apart.
- Bake for 12 to 14 minutes until the edges are firm and the centers remain slightly soft. Let cool completely on the sheets.
- In a large bowl, whip the heavy cream, confectioners’ sugar, and instant coffee until soft peaks form. Then gently mix in the mascarpone cheese until stiff peaks form.
- Flip half of the cooled cake discs over so the flat sides are facing up. Spoon a generous amount of the mascarpone filling onto each flat disc and top with another disc.
- Dust the tops with additional cocoa powder before serving.
Notes
For an adult twist, add a flavored liqueur to the filling or a layer of caramel sauce.
