Chocolate Thumbprint Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chocolate ganache (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the cocoa powder, flour, baking powder, vanilla extract, and salt until well combined.
  4. Roll the dough into small balls and place them on the prepared baking sheets.
  5. Make an indentation in the center of each cookie using your thumb or the back of a spoon.
  6. Bake for 10-12 minutes, then remove from the oven and allow to cool slightly.
  7. Fill each indentation with chocolate ganache.
  8. Let the cookies cool completely before serving.

Notes

For a richer flavor, use high-quality cocoa powder. If the dough is too sticky, chill it in the refrigerator for about 30 minutes.
