Festive Christmas Cake Traybake

A delightful and easy cake perfect for holiday celebrations, combining traditional flavors with simple baking.

  • 200g unsalted butter
  • 200g sugar
  • 4 large eggs
  • 300g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 200g mixed dried fruits
  • 100g chopped nuts
  • 100g marzipan (optional)
  • 100g icing sugar (for decoration)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Sift together the flour, baking powder, cinnamon, and nutmeg, then fold into the mixture.
  5. Stir in the dried fruits and nuts.
  6. Pour the batter into a greased traybake pan.
  7. Bake for 25-30 minutes or until a skewer comes out clean.
  8. Let cool completely before decorating with marzipan and icing sugar.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze individual pieces wrapped tightly.
