Christmas Cranberry Meatballs

Festive meatballs blended with a sweet and tangy cranberry sauce, perfect for holiday gatherings.

Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup chopped onion
  • 1/2 cup cranberries (fresh or dried)
  • 1/4 cup packed brown sugar
  • 1/2 cup cranberry sauce
  • 1/4 cup soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic powder, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. In a saucepan, mix cranberry sauce, brown sugar, soy sauce, and cranberries over medium heat until heated through and the sugar is dissolved.
  6. Pour the sauce over the meatballs.
  7. Bake for 25-30 minutes, or until the meatballs are cooked through.
  8. Serve warm as appetizers.

Notes

Store leftover meatballs in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
