Ingredients

  • 1 whole turkey (1214 pounds)
  • 1 cup unsalted butter, softened
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 onion, quartered
  • 1 lemon, halved
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the softened butter with rosemary, thyme, sage, minced garlic, salt, and pepper.
  3. Carefully loosen the skin of the turkey and spread the herb butter underneath the skin.
  4. Season the turkey cavity with salt and pepper, then stuff it with the quartered onion and halved lemon.
  5. Place the turkey in a roasting pan and surround it with carrots and celery.
