Ingredients

Scale
  • 4 cups stale bread, cubed
  • 2 cups sugar-free eggnog
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg

  4. Add the bread cubes and raisins (if using) to the mixture and stir to combine.
  5. Let it sit for about 10 minutes to soak.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 35-40 minutes or until the center is set and the top is golden.
  8. Serve warm with a dusting of powdered sugar, whipped cream, or sauce if desired.

Notes

For best results, use day-old bread and allow ample soaking time for a moist pudding.
