Delicious cupcakes that taste like churros, topped with a buttery cinnamon frosting and coated in cinnamon sugar.

- 1/2 teaspoon baking powder

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs

- 1/2 cup milk
- 1/4 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
- 1 cup butter (for frosting)
- 4 cups powdered sugar (for frosting)
- 2 teaspoons vanilla extract (for frosting)
- 2–4 tablespoons milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 15-18 minutes, or until a toothpick comes out clean. Let the cupcakes cool completely.
- For the cinnamon coating, mix the 1/4 cup sugar and cinnamon in a bowl.
- For the frosting, beat the butter until creamy, then gradually add powdered sugar and vanilla. Add milk as needed to reach desired consistency.
- Frost the cooled cupcakes and dip the tops into the cinnamon sugar mixture.
- Serve warm or at room temperature with a dusting of extra cinnamon sugar on top.
Notes
Use room temperature butter and eggs for a smooth batter. Cool cupcakes fully before frosting to avoid melting.
