- 1 cup keto bread (cubed)
- 1 cup unsweetened almond milk
- 1/4 cup erythritol or other keto-friendly sweetener
- 2 large eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup walnuts (chopped)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the almond milk, sweetener, eggs, cinnamon, nutmeg, vanilla extract, and salt.
- Fold in the cubed keto bread and chopped walnuts until well combined.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the pudding is set and lightly golden on top.
- Allow to cool slightly before serving.
Notes
Use day-old keto bread for better soaking. Can add sugar-free chocolate chips for extra flavor.
