Warm and cozy cinnamon walnut bread pudding that is low in carbs, perfect for a sweet dessert or breakfast.


Ingredients

  • 1 cup keto bread (cubed)
  • 1 cup unsweetened almond milk
  • 1/4 cup erythritol or other keto-friendly sweetener
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnuts (chopped)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the almond milk, sweetener, eggs, cinnamon, nutmeg, vanilla extract, and salt.
  3. Fold in the cubed keto bread and chopped walnuts until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25-30 minutes or until the pudding is set and lightly golden on top.
  6. Allow to cool slightly before serving.

Notes

Use day-old keto bread for better soaking. Can add sugar-free chocolate chips for extra flavor.
