  • 12 tablespoons sriracha or chili paste (to taste)

Instructions

  1. Slice the cucumbers into thin rounds or sticks.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, and sesame oil until smooth.
  3. Toss the cucumber slices in the peanut sauce until well coated.
  4. Let it sit for about 10-15 minutes to absorb flavors.
  5. Serve chilled, garnished with sesame seeds, chopped peanuts, and cilantro.

Notes

Choose firm cucumbers for the best crunch. Adjust the amount of sriracha or chili paste according to your spice preference.
