Instructions
- Slice the cucumbers into thin rounds or sticks.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, and sesame oil until smooth.
- Toss the cucumber slices in the peanut sauce until well coated.
- Let it sit for about 10-15 minutes to absorb flavors.
- Serve chilled, garnished with sesame seeds, chopped peanuts, and cilantro.
Notes
Use fresh cucumbers for the best crunch. Adjust the sriracha or chili paste according to your spice level preference.
