Description

A delicious fusion of chicken, ham, and Swiss cheese rolled in tortillas and baked in a creamy sauce.


Ingredients

  • 8 oz cooked chicken, shredded
  • 4 oz ham, diced
  • 4 oz Swiss cheese, shredded
  • 8 small low-carb tortillas
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, diced ham, and Swiss cheese.
  3. Place a portion of the mixture in the center of each tortilla, roll them up, and place seam-side down in a greased baking dish.
  4. In another bowl, combine heavy cream, chicken broth, garlic powder, onion powder, salt, and pepper. Pour the mixture over the rolled enchiladas.
  5. Bake in the oven for about 20-25 minutes until heated through and bubbly.
  6. Garnish with green onions if desired before serving.

Notes

For thinner sauce, add a little more broth or cream. Use cooked chicken you like, such as rotisserie or baked chicken.
