A delicious fusion of chicken, ham, and Swiss cheese rolled in tortillas and baked in a creamy sauce.

- 8 oz cooked chicken, shredded
- 4 oz ham, diced
- 4 oz Swiss cheese, shredded
- 8 small low-carb tortillas
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix shredded chicken, diced ham, and Swiss cheese.
- Place a portion of the mixture in the center of each tortilla, roll them up, and place seam-side down in a greased baking dish.
- In another bowl, combine heavy cream, chicken broth, garlic powder, onion powder, salt, and pepper. Pour the mixture over the rolled enchiladas.
- Bake in the oven for about 20-25 minutes until heated through and bubbly.
- Garnish with green onions if desired before serving.
Notes
For thinner sauce, add a little more broth or cream. Use cooked chicken you like, such as rotisserie or baked chicken.
