Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
- Add the ground beef, breaking it up with a spoon; cook until browned.
- Stir in mixed vegetables and cook for another 5 minutes.
- Pour in the beef broth and season with salt, pepper, and dried herbs.
- Bring to a simmer and cook until heated through and slightly thickened, about 5-10 minutes.
- Serve over cooked rice or pasta.
Notes
Use lean ground beef to reduce grease and drain excess fat after browning if desired. Add cheese on top when serving for extra flavor.
