Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.75 oz) cream of chicken soup
  • 1/2 cup milk or chicken broth
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup frozen peas and carrots
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup crushed crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  • Preheat your oven to 375°F (190°C).
  • Combine the ingredients: In a large bowl, mix the cooked chicken, cream of chicken soup, milk (or broth), sour cream, half of the cheddar cheese, frozen peas and carrots, and garlic powder. Season with salt and pepper.
  • Assemble the casserole: Pour the mixture into a greased 9×13-inch baking dish.
  • Prepare the topping: In a small bowl, combine the crushed crackers or breadcrumbs with melted butter. Sprinkle this evenly over the chicken mixture.
  • Bake: Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbling.
  • Add remaining cheese: Remove from the oven, sprinkle the remaining cheddar cheese on top, and bake for an additional 2 minutes or until the cheese is melted.
  • Serve: Let the casserole cool slightly before serving.

Notes

  • Customize the veggies: Feel free to add other vegetables like broccoli, bell peppers, or spinach.
  • Use leftover chicken: Rotisserie chicken works perfectly in this recipe.
  • Make it ahead: Assemble the casserole, cover, and refrigerate for up to 24 hours before baking. Add 5-10 minutes to the baking time if cooking straight from the fridge.
  • Freezing instructions: Assemble the casserole (without baking), wrap tightly, and freeze for up to 3 months. Thaw in the fridge overnight before baking as directed.
