Impressive Cranberry Brie Stuffed Chicken

A delightful blend of rich brie cheese and tangy cranberries stuffed in tender chicken breasts makes this dish perfect for any occasion.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a medium saucepan over medium heat.
  3. Add cranberries and cook until they soften and burst, about 5 minutes.
  4. Stir in honey, orange juice, cinnamon, ginger, salt, and black pepper. Cook until thickened, about 3-4 minutes.
  5. Remove from heat and cool.
  6. Cut a pocket in each chicken breast.
  7. Stuff each breast with brie cheese and cranberry mixture.
  8. Secure openings with toothpicks.
  9. Heat a skillet over medium-high heat and sear chicken for 2-3 minutes on each side until golden brown.
  10. Combine panko and melted butter, then spread over chicken.
  11. Transfer skillet to the oven and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  12. Let the chicken rest for 5 minutes and sprinkle with parsley before serving.

Notes

Pair with roasted vegetables or a fresh salad for a complete meal. A drizzle of honey enhances the flavors.
