Ingredients

  • Phyllo pastry sheets
  • Goat cheese
  • Dried cranberries
  • Honey
  • Salt
  • Pepper
  • Olive oil or melted butter for brushing
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, blend goat cheese, dried cranberries, honey, salt, and pepper until well combined.
  3. Take a sheet of phyllo pastry and brush it with olive oil or melted butter.
  4. Layer additional phyllo sheets on top, brushing each layer with olive oil.
  5. Cut the layered phyllo into rectangles.
  6. Place a spoonful of the goat cheese mixture at one end of each rectangle.
  7. Roll the phyllo over the filling, tucking in the sides as you go, to create a roll.
  8. Place the rolls on a baking sheet lined with parchment paper and brush the tops with more olive oil.
  9. Bake for 15-20 minutes or until golden brown.
  10. Serve warm and garnish with fresh herbs if desired.

Notes

Keep phyllo sheets covered with a damp towel while working to prevent drying out. Adjust honey amount based on sweetness preference. Fresh cranberries can be used but may require extra sweetening.
