Ingredients
- Phyllo pastry sheets
- Goat cheese
- Dried cranberries
- Honey
- Salt
- Pepper
- Olive oil or melted butter for brushing
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, blend goat cheese, dried cranberries, honey, salt, and pepper until well combined.
- Take a sheet of phyllo pastry and brush it with olive oil or melted butter.
- Layer additional phyllo sheets on top, brushing each layer with olive oil.
- Cut the layered phyllo into rectangles.
- Place a spoonful of the goat cheese mixture at one end of each rectangle.
- Roll the phyllo over the filling, tucking in the sides as you go, to create a roll.
- Place the rolls on a baking sheet lined with parchment paper and brush the tops with more olive oil.
- Bake for 15-20 minutes or until golden brown.
- Serve warm and garnish with fresh herbs if desired.
Notes
Keep phyllo sheets covered with a damp towel while working to prevent drying out. Adjust honey amount based on sweetness preference. Fresh cranberries can be used but may require extra sweetening.
