Cranberry Pear Crisp Cake

  • 1/2 cup brown sugar
  • 1 tsp baking powder

  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup oatmeal
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, mix the diced pears and cranberries; set aside.
  3. Cream together the butter, sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Fold in the pears and cranberries.
  8. Pour the batter into the prepared cake pan.
  9. In a small bowl, combine oatmeal and a bit of brown sugar; sprinkle the mixture over the top of the cake batter.
  10. Bake for about 35-40 minutes or until a toothpick comes out clean.
  11. Let cool slightly before serving. Enjoy!
