Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, eggs, and vanilla extract.
  4. Combine dry ingredients with wet ingredients until a dough forms.
  5. Fold in cranberries and walnuts.
  6. Divide the dough in half and shape each half into a log on the baking sheet.
  7. Bake for 25-30 minutes or until golden.
  8. Remove from oven and let cool for 10 minutes.
  9. Slice the logs diagonally into 1/2-inch thick pieces.
  10. Return to the oven and bake for an additional 10-15 minutes until crisp.
  11. Cool completely before serving.
