Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and sauté until they are soft and translucent.
- Add the asparagus and cook for about 5 minutes until tender.
- Pour in the broth and bring to a simmer.
- Cook for an additional 10-15 minutes until the asparagus is fully cooked.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Serve warm.
Notes
