Creamy Cajun Sausage Pasta

A delicious and creamy pasta dish with bold Cajun flavors and andouille sausage, perfect for busy weeknights.

  • 13 oz. andouille sausage links, sliced into medallions
  • 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
  • ½ medium red bell pepper, stemmed, seeds removed, and thinly sliced
  • ½ medium yellow bell pepper, stemmed, seeds removed, and thinly sliced
  • 3 large garlic cloves, minced
  • 12 oz. gluten-free penne pasta
  • ½ cup canned, diced fire-roasted tomatoes
  • 3 ½ cups chicken broth
  • 2 tablespoons Cajun seasoning mix
  • 7 oz. cream cheese
  • Salt to taste
  • Fresh Italian parsley, finely chopped
  • Red pepper flakes

Instructions

  1. Add the sliced sausage to a skillet over medium heat and sear until slightly crisp, about 4 minutes. Remove and set aside.
  2. In the same skillet, add mushrooms, bell peppers, and garlic; sauté for about 3 minutes.
  3. Stir in pasta, tomatoes, broth, and Cajun seasoning.
  4. Cover and bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally.
  5. Stir in cream cheese until melted.
  6. Return sausage to skillet, season with salt, and mix well.
  7. Garnish with parsley and red pepper flakes before serving.

Notes

Adjust the spice level by using more or less Cajun seasoning to suit your taste. Can be made gluten-free with specific pasta alternatives.
