- 13 oz. andouille sausage links, sliced into medallions
- 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
- ½ medium red bell pepper, stemmed, seeds removed, and thinly sliced
- ½ medium yellow bell pepper, stemmed, seeds removed, and thinly sliced
- 3 large garlic cloves, minced
- 12 oz. gluten-free penne pasta
- ½ cup canned, diced fire-roasted tomatoes
- 3 ½ cups chicken broth
- 2 tablespoons Cajun seasoning mix
- 7 oz. cream cheese
- Salt to taste
- Fresh Italian parsley, finely chopped
- Red pepper flakes
Instructions
- Add the sliced sausage to a skillet over medium heat and sear until slightly crisp, about 4 minutes. Remove and set aside.
- In the same skillet, add mushrooms, bell peppers, and garlic; sauté for about 3 minutes.
- Stir in pasta, tomatoes, broth, and Cajun seasoning. Cover and bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally.
- Stir in cream cheese until melted. Return sausage to skillet, season with salt, and mix well.
- Garnish with parsley and red pepper flakes before serving.
Notes
For a spicier dish, add more Cajun seasoning or extra red pepper flakes. Store leftovers in an airtight container for 3-4 days.
