Description

A rich and simple egg salad mixing hard-boiled eggs, mayo, ranch mix, tomatoes, avocado, bacon, and blue cheese.


Ingredients

  • 1/2 cup mayonnaise
  • 1 packet dry ranch dressing mix
  • 1/2 cup diced tomatoes
  • 1/2 cup diced avocado
  • 1/4 cup crumbled bacon
  • 1/4 cup blue cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chopped hard-boiled eggs, mayonnaise, and dry ranch dressing mix. Stir until well combined.
  2. Gently fold in diced tomatoes, avocado, crumbled bacon, and blue cheese.
  3. Season with salt and pepper to taste.
  4. Serve on a bed of lettuce, in a sandwich, or on crackers.

Notes

For best texture, do not mash the avocado too much and add salt last to taste.
