A rich and simple egg salad mixing hard-boiled eggs, mayo, ranch mix, tomatoes, avocado, bacon, and blue cheese.

- 6 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 packet dry ranch dressing mix
- 1/2 cup diced tomatoes
- 1/2 cup diced avocado
- 1/4 cup crumbled bacon
- 1/4 cup blue cheese, crumbled
- Salt and pepper to taste
Instructions
- In a large bowl, combine chopped hard-boiled eggs, mayonnaise, and dry ranch dressing mix. Stir until well combined.
- Gently fold in diced tomatoes, avocado, crumbled bacon, and blue cheese.
- Season with salt and pepper to taste.
- Serve on a bed of lettuce, in a sandwich, or on crackers.
Notes
For best texture, do not mash the avocado too much and add salt last to taste.
